How a multichannel mix is folded into fewer speakers.

Both defaults follow the reference the rest of this project follows, which is FFmpeg's own resampler, and both were previously neither implemented nor decided: the mixer applied the standard coefficients raw, so a source loud in several channels at once summed past full scale and clipped at the device.
